Insert HotBox into your pit once the correct adapters are installed. Slide the insert all the way to the front of the smoker over throat from firebox and towards the door as far as possible. Make a "normal" 300F fire and check your surface temp. Using a pizza stone will give you a higher surface temp than cooking on the steel only. **Too hot of a fire could get temps over 800F and could damage your finish.**
